Our Texas version
Stuff you need:
fresh jalapenos – about 12
4 Tbs cream cheese
2 Tbs cilantro (finely diced)
3 Tbs onion (finely diced)
4 Tbs shredded cheddar cheese
What you do:
Mix all ingredients (except jalapenos) together. Put aside.
Lay jalapenos flat (this is how they will sit on the grill without rolling over too much). Cut a slit from the top of the pepper (just below the stem) almost to the tip. Squeeze the pepper at the top and bottom to make a slight opening in the pepper. Using a butter knife, scoop a bit of the cream cheese mixture and place into the pepper opening.
For a milder version: Remove some or all of the seeds and white membrane from inside the pepper. There is no guarantee that this will make the pepper mild, but it helps.
Optional: wrap each pepper with 1/2 slice of bacon and secure with a toothpick (skewered through the pepper).
Place peppers on a hot grill (with the slit side up). Grill until the outside of the pepper is lightly browned (or roasted). Let peppers sit for about 10 minutes before eating as the cream cheese filling will be hot.

I’ve just picked 12 or so jajapenos fresh FROM MY GARDEN, can’t wait to make this recipe. This pepper is soooo easy to grow in south Fl. You can easily grow one or two or three! I’ll let you know how they turn out. Yvette

I have tried growing jalapenos in containers (as well as other peppers) but the bugs eat the whole plant! I don’t know what kind of bugs but they chew the leaves to pieces. I had a tomato plant right next to the jalapenos and nothing bothered it so these bugs must like jalapenos too!

We loved them too. I made a few additions. 3 cloves of minced garlic. A little salt and fresh ground black pepper. Also put some fresh squeezed lime juice into the mixture. They were an instant hit.

I often tweak the recipe a bit since we make them so much. I like to add garlic, like you did, but I haven’t added lime. I’ll have to try that!
